Ok this one has a smaller 6 in date and thick lettering on back

Is this normal for this coin? I know these have a lot of varieties. Any thoughts Thank you

In the official Belgian catalogue there is no mentioning about varieties for the 5 centimes 1863 except an overstrike 1863/62.
Since a few years there is another Belgian catalogue with more varieties but I haven't that one yet. Maybe there are more varieties in it for this coin.

World coins by date and mint place, 1850-2000
These all look like die varieties to me. Back in 1863 with a production of over 16 million coins, my guess is they used a large number of dies. In the US, the main devices were on the hub, but other features such as the date had to be added by hand to the die. I suspect the same was true in Belgium, and that may explain the lettering differences as well.
