Ha!  No. The chef has 2 teenage boys.  I took off the tin foil, went to go and get my phone from the other room came back into the kitchen, and 3 of them had magically disappeared.  😆

Key NEil it been very odd,two in family with cancer  and two with heart issues. I don't think one brother will win over the cancer.   But it good to have some time for coins again. I started this topic  back in 2013.  Just get some ideals for something to new make. It good to hear from you.

Lazy day. Today it will be those frozen spring rolls you can buy with cabbage and some soy on top.

 Went into the supermarket just now, about half an hour before closing 

 

and - as it is ‘use by’ today - got that for around 2% of the price [£4.85 down to £0.10]. 

 Pork and cider hotpot - topped with crispy potato slices - 

with kale in a rich and creamy Somerset cider sauce.  🍴

There's a charity restaurant in my city that collects the food waste from supermarkets (food that is still ok to eat, but they can't legally sell because it's too close to the use-by date)  They cook them into meals, and sell them to the public for NZ$4 each (the equivalent of around £2, or US$3)  on top of that, you can pay for extra meals for someone else, so someone who might not be able to afford it can get a free feed.  They also get their customers to drop off meals to people in the area who don't have transport and can't make it to the restaurant.  I think it's a wonderful idea.

Beetroot soup made on pork broth with diced potatoes and sliced carrots.

 Another visit to the supermarket - this time in the middle of 

the afternoon. Just over half price today, for Creamed Cabbage 

 

with the creamy sauce now flowed underneath, so will 

stir during and after it is in the microwave.

Yesterday it was baked potato with cream cheese chicken salad.

 

Today it was baked cod in cream sauce and mashed potatoes with green asparagus on the side.

 

Tomorrow I'll find some sort of thick sausages in the freezer with either rice or noodles.

O yeah, fat sausages with “chorizo” taste and stirfried rice with hot ketchup and hot mustard.

I liked neilithicman's earlier post about the charity restaurant. We have two local food banks, which fortunately accept garden surplus.

Just because a company feels that their branches don’t generate enough profit it gives them the right to rob people of their healthcare?

It's because many people can't afford their primary care, i.e. quit it all together, that regional hospital networks doesn't generate enough income. Ergo, they're losing customers, not because people don't get sick, but because the federal government has cut their spendings.

It has always been rough for rural folks, and it seems worse than ever now. The challenge isn't just affordability, but also accessibility. 

 

45 years ago, my wife was a public health nurse for the county to the north. She was assigned to visit poverty and elderly folks who couldn't get to the hospital or clinic. Some of the conditions were truly appalling. 

Sorry this is getting off topic, and not a bit uplifting.

Lazy food today, since we've been on the road most of the day.

 

Swedish chicken meatballs, like the ones you can get at IKEA (30% expiry discount) with potato sallad (home made yesterday).

 

We also purchased hen's breast filets at a very favorable kilogram price, which will be served tomorrow with rice and curry sauce. Edit: … and som corn on the cob that I found in the freezer.

Also readymade pea soup without meat (50% expiry discount), which will be served friday, our meat free day.

My boy turned 20 yesterday, so his Nani cooked him dinner.  Chicken Palau, lamb curry, naan bread, raita and chutney, then I made pikelets with cream and jam for dessert.

Today we will have pork roast, hopefully with really crisp rinds, boiled potatoes with brown gravy and sauerkraut on the side.

I'll probably have some Schnitzel tonight.  I'll dig something out of the garden to go with it.  We've got some potatoes ready, and a bit of silver beet, so that will likely be the accompaniment.

Salmon “steak”, German fried potatoes (Bratkartoffeln) fried in Spanish pimenton (paprika powder) and a green salad on the side (iceberg lettuce, sliced cucumber and sour cream).

Home made vegie soup made on cow heart broth with cabbage, diced fresh potato, sliced carrot, sweet peas, dill and garlic. €2.50 for three portions.

Pork medallions with Greek-style seasoning, cabbage, green beans, carrots with some boiled new potatoes. With some ginger beer to wash it down. 

 

Also worth knowing tomorrow I'm having a sausage and egg bap with Spanish chocolate milk for breakfast:)

Whole paprika stuffed with minced pork, rice with gravy.

Swedish meatballs with pasta (penne rigate) in a cream/onion/paprika gravy.

My cooking course means homemade minestrone soup, I did a bit of “Experimentation” and halved the recipe for 4 serves. I ended up with about 3 litres of food and froze two big containers of it.

 

This is my throw and go recipe - a great winter stew (Americans, note this is in METRIC measurements).

 

2 chopped up potatoes (Rua or Hardy), leave skin on but scrub

1 whole chopped up onion

3 chopped carrots, cut off ends and scrub

200 grams of cubed pumpkin, skin removed

2 cubes of vegetable stock or beef stock (I use OXO cubes) makes 500ml of stock

1 can (400 grams or so) of tomato puree (Or use passata sauce)

 

Boil all ingredients in a large saucepan, stir and then turn down and simmer for 15 minutes. Add coriander and spices to your pleasure (Paprika etc).

 

Then add 200 grams pasta, and one can of beans - kidney, mexican, black add and stir, add some peas(1 cup), simmer for 10  minutes and serve!!

 

Delicious stuff and very cheap, a great one pot meal.

Sunday treat: Schnitzel with cheese topping, fried cream potatobits and a green sallad on the side (iceberg, cucumber).

Just had roast chicken, roast potatoes, parsnips, carrots and cauliflower cheese, along with a good bottle of cab' suv'.  Now very full, very happy and well and truly fortified for the week ahead 😊

Currently in Belgium for a week. Today I cooked horse steak with fresh garlic, pepper and salt with a balsamic reduction with a side of boiled green beans and carrots topped with some cress and a couple radishes, with a little brown sauce from a sachet I “borrowed” from the ferry breakfast bap I had a few days ago.

Just back from a trip to bonnie Scotland. Yes, that photo was taken outside in the sunshine. It does occasionally appear up there. 🤣

Here's the breakfast I had a few times that week or a variation thereof. 😅

Fat fried toast, regular toast, sausage, lorne “beef square” sausage, bacon, beans, scrambled egg, and of course, haggis.

Sometimes had fried egg, tattie scones, oatcakes, or fried tomato, swapping out bits & pieces as I had available. One day had “Mallaig smokies” (kippers - smoked herring) after I'd been up there on the train for the day. Must admit, I don't think fish belongs on a breakfast menu. Not unpleasant mind you, just… didn't mix as well with the other flavours in my opinion.

 

Had hoped to get some Stornoway black pudding but couldn't find any & didn't travel quite that far up. Differs from typical black pud by being made from beef (rather than pork), & cow (rather than pig, or sometimes as well as) blood. Probably not my thing as not fond of typical version. 🤷‍♂️

Tonight I'm having papoutsakia. 😊
